At the date of visit our Head Chef was away and a relief chef from an agency was in his place. We rectified all issues within 5 days and we were revisited by the same Inspector 21 days after the initial visit and he was completely satisified with our progress and changes and recommended we ask for an immediate formal revisit and rescore.
